A week of groceries in the camper

I grew up in a house where there was always a hot meal on the table for anyone who needed it. There were always a lot of people in and out of my house growing up, and one thing my mom always made sure of was that every single one of those people was fed when they were there.

My parents had skate ramps in their barn, and started a skate club in my hometown. When this happened it meant there were a lot of high school boys that came over to skate every day. With those boys being there to skate and do their homework every day, they were also eating dinner every night. These dinners made them family in our house, and some of my best memories are from them spending the afternoon at our dining room table.

Growing up we also learned that I was (and still am) allergic to gluten. My mom was already someone who baked a lot, but when options to get sweets at the store became limited for me she made it her mission to make sure I still had the same amount of delicious baked goods to eat as everyone else.

When I grew up and moved out I seemed to take all of this to heart. I remember the summer of 2020 going to the skatepark and regularly inviting anyone who wanted to eat over for dinner. One day when I was feeding a group of people in my little apartment I remember thinking “I’ve turned into my mother.” 

From apartment to apartment in Colorado I fed people as much as I could. Whether that meant bringing leftovers into work for my friend Josh to eat, having people over for dinner, or cooking Thanksgiving dinner for whatever group of people didn’t have plans, I was up for the task. My brother hated how often I invited people over for dinner, but he definitely didn’t hate that I cooked dinner most nights.

Moving into the camper I lost the ability to host nearly as many people. Dinner’s with John and my dad at Silverton felt very cramped, although we did all eat dinner together every night there. I continued to cook, and even baked some with the oven John’s van was equipped with. The baking did decrease some when his van got a heater, though.

Being on the farm in Hawaii has been great, because there are so many people around who appreciate the cooking and baked goods that are always around. All good things come to an end, though, and soon it will just be Hunter and I cooking for each other in the camper. The camper has had the addition of an oven, though, allowing for a lot more baking in it!

On this page of my site I just want to share a bunch of recipes that are camper friendly. It’ll include breakfast, lunch, dinner, and deserts. While some of these recipes may be food blog-esque, some of them will just be recipes. Not every single recipe will have some fun explanation, but hopefully they will all be easy enough to make in a small space. There’ll be a section that just explains how to make a little stretch a long way, and even some basic grocery lists to fit a budget into a small cabinet!

I hope everyone can gain something from this page. Whether it be learning how to cook something new, grocery shop a little cheaper, or how to fit all of the groceries they need for a week in the small cabinet they have in their camper or van! Follow along!
