Apple Cinnamon Chocolate Chip Bread

When I go to bake I’m not good about planning it ahead of time. When we were in Hawaii it wasn’t as hard, as we had almost unlimited access to bananas and zucchini, making it easy to grab some overripe ones and make some bread or muffins. Now that we’re back in the camper with limited space I’ve been finding it much harder to find fun things to bake.

This recipe was born from wanting to bring something to dinner with Arehn and Jim, and having no idea what to make. We didn’t have much to add in terms of mix ins, and I’d made blondies a couple times already. I looked around and saw the apples, and decided that I could do something with that.

Everyone at dinner approved of the bread, and it’s great to make these things and know that we can do everything in the camper that we would do at home. Adding an oven was an addition that a lot of people see as losing space, but for us it is something that I didn’t realize how much I missed until I had one again. Being able to have baked goods on hand helps me with choosing the *slightly* healthier option. 

A sweet treat at the end of the day is something I feel like I cannot go without, and being able to make my own makes me enjoy it that much more. With being gluten free, it also can be very hard to find a variety of baked goods that taste good. They are also extremely expensive, which is part of my love for baking. I get to make something tastier than anything I could get at the store for a fraction of the price. Being far away from the grocery store it also makes it take almost the same amount of time to just make it yourself if you already have the ingredients on hand. With no further ado, here’s the recipe!

Recipe:

  • 1/2 cup melted butter

  • 2/3 cup sugar

  • 2 eggs

  • 1/4 cup half and half

  • 1 tsp vanilla extract

  • 1 1/2 cup Gluten Free 1:1 Flour (I used King Arthur here, but Bob’s Red Mill is my go to)

  • 1 tsp baking soda

  • 1 1/2 tsp cinnamon

  • 1 diced apple

  • 1/3 cup chocolate chips

Directions:

  • Preheat oven to 375 degrees.

  • Mix together melted butter, sugar, eggs, half and half, and vanilla until well combined.

  • Mix together flour, baking soda, and cinnamon.

  • Add dry ingredients to liquid mixture and mix until well combined.

  • Fold in diced apple and chocolate chips.

  • Transfer batter to 10” cast iron or other similar sized baking dish.

  • Bake at 375 for 20-25 minutes, or until butter knife comes out clean.
