THE Blondies
In this camper there’s always someone craving a sweet treat. These blondies are a go to. They’re super easy to make and they never last very long! The buttery, brow sugar taste makes them a favorite of mine. Hunter always requests them whenever I ask if he wants me to make a sweet treat.
One thing that I thought was going to be a little harder with baking in the camper was not having a microwave to melt butter and oil. While it is a slight inconvenience, melting the butter on the stovetop doesn’t take too long, and always smells really good. I also just use the pot I melt the butter in as the mixing bowl for the wet ingredients, and it saves me a dish, while still being able to mix wet and dry ingredients separately.
Speaking of ways to save a dish, I think the setup I have in the camper for baking is something other camper people could benefit from knowing about. It’s hard to store all of the things you usually use for baking in such a small space, but I’ve got it down. Instead of a big mixing bowl I just have a large Tupperware. This is where I store all of the ingredients I need to bake, but don’t use for much else. This is where I mix my dry ingredients. In terms of mixers, I avoid pulling it out, but I have an electric mixer. This lives in a pot that is almost never used in the dishes cabinet. It lives next to the mini waffle maker we have, along with the measuring cups.
Having an oven in the camper is amazing, but finding somewhere to store all of the stuff for baking isn’t the easiest thing. For us, doing so is definitely worth it, though. We only really bake in the cast iron, as it’s the easiest thing we have to keep in the oven when we’re driving. We have a child lock to hold the oven closed so we can keep our pans in there. While some of the methods to keep cabinets closed aren’t the most aesthetic in here, they do the job, and that’s all that really matters to us. We can keep baking if the cabinets stay closed while driving!
With no further ado, here’s the yummy blondie recipe!
Recipe:
1 cup gluten free 1:1 flour (Bob’s Red Mill is my go to)
1/2 tsp baking powder
1/2 tsp salt
1/8 tsp baking soda
5 tbsp butter, melted
1 cup brown sugar
1 egg
1 tsp vanilla extract
1/4 cup half and half
1/2 cup chocolate chips
Directions:
Preheat the oven to 350 degrees
Mix together the flour, baking powder, salt, and baking soda.
Mix the brown sugar into the melted butter.
Add the egg, vanilla, and half and half to the sugar mixture. Mix until combined.
Add the dry ingredients to the wet mixture, mix until combined.
Fold in the chocolate chips.
Bake for 20-25 minutes, or until a knife comes out clean.
